Asafoetida (Ferula asafoetida) is an herb that is frequently used as a cooking spice in curry. It is part of the same family as carrots, celery, and parsley. The spice powder is orange-to-yellow in color and imparts a strong, pungent odor and taste.
The plant root contains oleo gum resins which have medicinal properties as well as flavoring properties. Recent studies have determined that it possesses antioxidant, antimicrobial, antidiabetic, antihypertensive, neuroprotective, and antineoplastic properties.
